Ingredients

• 2 cups carrots, julienned or sliced into thin strips
• 2 cups snow peas, trimmed
• 1 tablespoon olive oil or butter
• 2 cloves garlic, minced
• 1 tablespoon soy sauce
• 1/2 teaspoon sesame oil (optional, for added flavor)
• Salt and black pepper, to taste
• 1 teaspoon sesame seeds (optional, for garnish)

Instructions

• Prepare the Vegetables:
• Julienne or slice the carrots into thin strips.
• Trim the ends of the snow peas and remove any strings.
• Sauté the Vegetables:
• In a large skillet, heat the olive oil or butter over medium heat.
• Add the minced garlic and sauté for 1 minute, until fragrant.
• Add the carrots to the skillet and cook for 3-4 minutes, stirring occasionally, until they begin to soften but are still slightly crisp.
• Add the snow peas and continue to sauté for another 2-3 minutes, until they are tender-crisp and bright green.
• Season the Dish:
• Drizzle the soy sauce and sesame oil (if using) over the vegetables, and toss to coat evenly.
• Season with salt and black pepper to taste.
• Serve:
• Transfer the Carrots and Snow Peas to a serving dish and sprinkle with sesame seeds if desired.
