Broiled Reuben Sandwich

Ingredients

  • 8 slices rye bread
  • 1/2 pound thinly sliced corned beef
  • 1 cup sauerkraut, drained and squeezed dry
  • 8 slices Swiss cheese
  • 1/4 cup Russian or Thousand Island dressing
  • 2 tablespoons unsalted butter, softened
  • Dill pickles for serving (optional)

Instructions

  • Preheat your oven’s broiler to high. Position a rack about 6 inches from the heat source.
  • Spread a thin layer of Russian or Thousand Island dressing on one side of each slice of rye bread. On four slices of bread, layer the corned beef, followed by a portion of sauerkraut, and then two slices of Swiss cheese.
  • Place the remaining four slices of bread on top of each sandwich, dressing side down. Lightly butter the outside of each sandwich on both sides.
  • Place the sandwiches on a baking sheet. Broil for 2-3 minutes on each side, or until the bread is golden brown and crispy and the cheese is melted and bubbly. Keep a close eye on them to prevent burning.
  • Remove the sandwiches from the broiler and let them cool slightly. Cut in half and serve hot, with dill pickles on the side if desired.
