Instructions

  • Prepare the marinade: In a large bowl, combine the olive oil, minced garlic, lemon juice, oregano, thyme, paprika, salt, and black pepper. Mix well.
  • Marinate the chicken: Add the chicken thighs to the bowl and toss to coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  • Cook the chicken: For Grilling: Preheat the grill to medium-high heat. Grill the chicken thighs for 5-7 minutes on each side, or until the internal temperature reaches 165°F (74°C). For Baking: Preheat the oven to 400°F (200°C). Place the chicken thighs on a baking sheet and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C). For Pan-Searing: Heat a skillet over medium-high heat. Add a little olive oil and cook the chicken thighs for 6-8 minutes on each side, or until cooked through.
  • Serve: Transfer the chicken thighs to a serving platter. Garnish with chopped fresh parsley and serve with lemon wedges.
